Wowzer! Large cakes can be exciting to make but daunting to deliver. Subject to the design and weight, I suggest you transport the cakes as single tiers and assemble and complete in situ. This will give you peace of mind and mean that you can actually drive to speed limit on route, instead of crawling by the side of the road and stopping to check on your masterpiece at every lay by.

Before you go ahead with this master plan, find out all you can about the wedding venue – like if you would be allowed the space and time you need to assemble in situ. If this is an option, then remember to take your tool box with you and all the essentials you will require to assemble your masterpiece. Essentials like ribbons, a pair of scissors, palette knife, cake lifter, dowels, level, smoother, royal icing, candy melt, flowers etc. all need be on your list.

Write down a step by step action plan to ensure you don’t miss any steps, or forget any essentials. Have your paperwork or design from your consultation with your clients so you know exactly what your finished work is expected to look like.
